Which Linux OS operating system should I use as a beginner: Ubuntu or Kali Linux and why?

As a beginner... Ubuntu as it is an OS oriented to average users :) with many tools with graphical interface and easy installation. kali is oriented to auditing and computer security.
You should first of all if you are a beginner familiarise yourself with the console and its many uses for that Ubuntu is excellent and when you feel more skilled you can work linux from scratch to go deeper, Kali is for security issues I doubt it will suit your needs unless you are an advanced user who works in this field.
Now if you want you can mount VMware Workstation or VirtualBox and try them both or use the Live versions so you can be sure it goes well with the hardware you use.
Ubuntu as it is the most widespread.
You will find more applications, more support and easier to learn.
