Disabling updates is possible in the configuration options, but I don't recommend it, because they are usually required for newer applications released.
I give you an example, I used autocad 2015 for several years (one of my favourite versions), but I needed to use the new features of autocad 2020 and I installed it, but I had performance and graphics problems, I tried several solutions but they didn't convince me, in the end I updated Windows and it solved practically all the problems.
