Is adding an external monitor with 1920x1080 resolution via HDMI to a laptop with 1366x768 resolution a good idea? Will the monitor adjust to the laptop resolution or will it work in 1920x1080?

The laptop can generally handle both resolutions, but it depends on the particular capability of the laptop whether it is supported by the video chip.
Normally on a modern PC the video card does reach 1920x1080 resolution. On Windows/Linux you can decide the resolution of the external monitor or for example use it as a secondary or main monitor or as a mirror of the laptop monitor. Either way you have to check the specifications of the laptop.
It all depends on the configuration of the laptop. If it is set to display the same image on both screens the external monitor will work at 1366x768. But if it is configured as an extended monitor the laptop will adopt 1920x1080 for the external monitor and keep 1366x768 for its own display.
