It depends.
If the app is a game that validates against a server every time it is run then you will most likely no longer be able to run that game as your version will be different to everyone else's.
But if the app runs offline and does not validate against servers when running then don't worry you can still use it without any problems. Just keep in mind that sometimes updates fix bugs and issues or introduce new features.
