I have cooked ROMs for my Android phones.
Android source codes are Open Source, anyone can download and compile them for your phone. The catch? You need the collaboration of the manufacturer, to provide you with the sources of all the drivers needed to use the phone.
At this point (the collaboration of the manufacturer to provide the sources of the drivers)... does anyone think that Apple, with its closed ecosystems, is going to provide the sources of the drivers and donate them to the rest of the people? and for free?
No. iOS is a proprietary operating system. It only works on Apple devices.
