Because maybe you don't have all the photos in one folder, try to create a single folder and put all the photos there or maybe the photo is not uploaded properly.

Remember that instagram will only show all those photos that were uploaded to the platform. So there is no connection from the files on your mobile phone to the account.

I need a bit more context, but I think it may happen that in your photo gallery you don't see all the photos, because they are grouped together, if you select on Gallery, you will see a drop down menu and you can see other folders where photos are also stored, for example those you have from Instagram, those from the camera, those you have downloaded, those from Whatsapp, those from other apps, etcetera.
With that you can see all the photos you have stored in your general gallery on your phone.
