To change the measures of the storyboard I usually do the following:
1st - I select the StoryBoard.
2nd - I go to the RIGHT side and select the icon Show the size inspector. 3rd - In the SIMULATED property SIZE I switch to FreeForm and then I change the dimensions of the
StoryBoard .. I let it look like LANDSCAPE ...
I hope I understand your doubts right ...

Another way I realized now is the one I show in the image below:
In the part circled below (bottom left) to put the viewcontroller in landscape mode.
And to illustrate the first response I gave, I circled the upper right corner
to show where the property you had spoken to earlier is.

Man I had not even noticed the iPad ...
In fact if you notice the first two images that I posted I normally
do not work with AUTOLAYOUT enabled ...
When I enabled AutoLayout then I saw that the iPad option appeared.
I tried to make a simple screen .. and using the constraints make her stay with a good aesthetic on several devices including iPad. I also tried to use the VARY FIR TRAITS as you mention ... Dude, it was a dumbbell only.
So I deleted the view and started again from scratch.
AutoLayaute enabled, Use Trait Variations enabled
I put a VC with iphoneSE dimensions.
I put the objects. I packed them the way I wanted them.
I used on the SHOW THE SIZE INSPECTOR vane the AUTORESINZIG property of each
object to "ANCORA-LOS" in the way you wanted it to.
Then you can set all the buttons in different formats.
Everything was cool ... both in Landscape and in Portrait.
