If I install Windows 10 and Windows 7 in a dual boot but 10 in GPT partition, and 7 in MBR and both share external USB disks, could the latter be corrupted when using different partition type operating systems?

The answer is no. It doesn't matter the type of partition as long as the operating system boots correctly. Besides, it is dual-boot, meaning you have one operating system at a time, so I don't see any risk in accessing the external drives.
